To create a spot color in a palette: Click the little arrow on the palette and then "Edit Color". This will open the Palette editor. Select any process color, or create a new via "Add Color", give it a name (in this case CutContour) and then click the "Treat As" box and change to Spot. You'll notice that the color now has a small square in the bottom left corner. This indicates that it is a spot color. A spot color is primarily recognized by its name and creates a separate plate when doing color separations. The color mix can not be changed like it can for an RGB or a CMYK for example.
