Assumed DPI, which (dpi) means nothing in a bitmap, is assigned at 72 dpi when DPI is not specified in a file. Even when it is for images from cameras, it is typically assigned 72 dpi. It's a historic thing, but one that does have meaning. You can also assign a DPI of 300 dpi if the intent is print. Then the point size of text has a closer relationship on-screen. But really, it is easier and better to bring an image into CD, another vector application, or a layout application and do the text there. Especially if the intent is print, but this is true even if it is just to export out as another image.
