Shaun, a couple of things about your color management settings could be issues. I notice you have Simulate Color Management Off as the Preset. Just for fun, try the settings on the screen cap I've attached, except you may want to use RGB instead of CMYK as Primary Color Mode, depending on your end usage. I use CMYK because 99% of everything I do either gets sent to an offset press or a digital copier.
